 Cascara: How Coffee Cherry Pulp Became a Trendy Drink

Cascara is the dried pulp of coffee cherries, which is typically used to make tea. While coffee beans are well-known worldwide, the pulp of the cherries had remained largely overlooked until its rich flavor and beneficial properties gained well-deserved popularity. Cascara is a true gift for those who love to experiment with flavors. In terms of taste, it offers a whole spectrum of sensations: light floral notes, a berry aftertaste, and a sweet base. It’s brewed just as easily as tea, but its flavor is more of a mix between tea and fruit compote.

After coffee cherries are harvested, farmers remove the beans for further processing. The remaining pulp is usually used as organic fertilizer for the plantations. However, the idea of making a drink from this pulp originated with Salvadoran farmer Aida Battle. She dried the coffee cherry pulp and brewed it, and the result reminded her of a rosehip or dried fruit compote. This is how cascara was born and quickly gained popularity in specialty coffee shops around the world.

The name “cascara” comes from the Spanish word meaning “cherry skin.” In various countries, this product is also called “husk,” “buno,” or “gishr,” but it is “cascara” that has become the most widely recognized.

Interesting fact: From 100 kg of dried coffee cherries, only 30 kg of cascara is obtained, making this product quite valuable.

It contains caffeine, but in much lower amounts than coffee—approximately 111 mg per liter of the drink, which is four times less than in filtered coffee. The taste of cascara is reminiscent of a compote with hints of dried apricots, apples, and berries. The drink has a natural sweetness and a pleasant aroma, making it an ideal choice for those looking for an alternative to regular coffee or tea. In addition to its taste, cascara is rich in vitamin C and antioxidants, which help support the immune system, improve skin health, and boost energy levels.

How to brew cascara?

To prepare the drink, you can use a French press or a teapot. Here's a simple recipe:

  • Take 10-12 grams of cascara for 250 ml of water at a temperature of 95-97°C.
  • Pour hot water over the dried pulp.
  • Let it steep for 6-8 minutes, then strain.
  • You can add honey, lemon, or spices to create a unique flavor.
